Wild caught and naturally harvested from the fresh waters of Lake Erie in Ontario, Canada, once landed on board our trawlers, the catch is immediately iced and loaded into insulated containers of ice and ice water to preserve the smelt’s natural fresh, sweet flavour and rich nutrients. The containers of fresh fish and ice are then sealed on the trawler to protect the delicate fish for transport to harbour and on to Great Lakes Food’s state-of-the-art processing facility.
